Predicting Acceptance of Frozen Foods Stored for Extended Periods

Advice to the Natick Laboratories on predictive expressions for shelf life of frozen foods relating an objective acceptance index to the physical properties of the food, the temperature, and the time. The committee commented on physical and chemical indices of quality of frozen foods; sensory testing methods; and mathematical development for prediction of storage life for the major categories of frozen foods.
