The report discusses the second year of a multi-year project to develop a gas-fired integrated commercial cooking system that uses a deep fat fryer with a pulse combustion burner/heat exchanger as the basic unit. The operation of a simulated pulse combustion split vat fryer has been demonstrated to surpass the 80% efficiency goal and meet other preliminary performance specifications. Associated system components have also been developed and preliminary efforts made to reduce the noise to a level acceptable in a commercial kitchen environment.
