摘要

The publication presents a lexicon of 19 terms to describe desirable as well as undesirable flavors in peanuts. The terms or descriptors, are to be used with flavor intensity ratings ranging from 0 to 10 in flavor evaluations of peanut kernels and butters. The lexicon and intensity scale were developed by a 13-member panel of flavor and peanut specialists representing industry and the U.S. Department of Agriculture.
