摘要

The first goal of the study was to determine a method which would lighten the flesh color, deodorize, and eliminate the strong, undesirable flavor components in the mackerel. In order to achieve this goal it was necessary to determine a method of washing the whole fillets. The second goal of the study was to use the washed fillets as the raw material for a consumer acceptable breaded product. Based on consumer taste results, an acceptable breaded fish nugget was produced using washed mackerel fillets.
