Development of a High-Efficiency Power Burner for Commercial Open-Top Ranges. Final Report April 1985-April 1987

Open-Top burners as used in commercial cooking equipment are inefficient. Chefs are more concerned with cooking speed than with operating costs or fuel consumption and therefore are known to increase the firing rate of an open-top burner by opening the control orifice in an attempt to increase the cooking speed. The project was aimed at improving the operation of an open-top burner by making it more efficient and therefore faster with the use of less fuel. Safety would also be enhanced as a result. The objective was met with the use of a powered burner having a wide turndown ratio and capable of efficient operation over its operating range through the use of an air-fuel ratio controller. Powdered metal technology provided the means for low-cost construction of the burner head.
