Development of a Vertical Conveyorized Broiler. Final Report August 1987-November 1989

The report describes the development of an advanced conveyorized broiler that will provide significant improvements in several areas including speed of cooking, energy consumption, smoke/grease emissions, and size. The key factors in the design approach were vertical orientation of the meat patty and burners and premixed powered infrared burners. The primary problems encountered were in the areas of smoke, sticking of patties to the conveyor, and providing sear marks on the patties. The development of a catalytic converter to clean the smoke emissions is also presented. The first-generation prototype met most of the key objectives.
