Measurements are reported of mean, rms, probability density and spectral density of temperature and of positive ion concentration in unpremixed and premixed, turbulent, round, free jet flames. Physical pictures emerge which enhance the understanding of turbulent combustion and facilitate the prescription of appropriate mathematical models. Quantitative information about the intermittent nature of turbulent unpremixed combustion is provided by the data. Furthermore, the measurements suggest that premixed reaction in fully turbulent flows is governed by transport between Kolmogorov micro-scale vortex tubes in different states of reactedness.
