Tryptic digestion of irradiated β-lactoglobulin has been studied. The digestibility of this protein is altered slightly at low dose levels and marked changes occur at doses greater than 2 Mrad. The possible effect of irradiation on the protein is discussed as well as some of the variables affecting the changes.
