A simple method is described for the differentiation of irrad-iated and unirradiated horse-meat by gas-liquid chromatography, but changes which occur during the storage of irradiated samples reduce its accuracy. However, a range of aged laboratory samples has been successfully differentiated by measurement of the total volatile content. Recommendations have been made for the evaluation of this method under practical conditions.nA colorimetric method for the discrimination of recently irrad¬iated beef, which has been described in the literature, has been found unsuitable for samples of aged horse-meat.
