Conjugese extracted from winged bean or sweet potato leaves was used to release folate from Sri Lankan foodstuffs. Total folate was then estimated by competitive binding assay using goat milk as binding agent. Of 33 foodstuffs investigated, green gram, cow pea, and red gram among the pulses and mukunuvenna, amaranth and centella among the leafy vegetables were shown to be rich sources of folate. Between 20 and 60% of total folate was lost when such foodstuffs were boiled for 60 minutes. It is thus advisable that pulses and leafy vegetables be boiled only for the minimum time necessary for tenderization before consumption. (Atomindex citation 12:621996)
