Yeast phyla have been selected for the cellobiose and soluble cellodextrins fermentation. A study of the glucosidase of the Torulopsis Molischiana phylum is presented. Torulopsis M. glucosidase is exocellular with a glycoproteinic nature and its activity spectrum is very large. An improvement of this phylum through genetic engineering is envisaged.
