Storage brines and processing waters from the production of canned ripe olives and glass packed green olives were treated with activated carbon. The reuse potential of reconditioned brines was evaluated. Reconditioned storage brines can be used to store freshly harvested olives for commercially significant periods. Canned samples pre¬pared from olives stored in reconditioned brine were of good quality. Reconditioned brines of lower salt content were reused with no de¬tectable effect on the quality of the final product.nThis report was submitted in fulfillment of Grant 12 060 EHU under the partial sponsorship of the Federal Water Quality Administration.
