Later that year President Nixon told the White House Conference on Food, Nutrition and Health that '... a great many Americans are not eating well enough to sustain life (28,45).' These statements emanating from the President of the United States, emphasizing nutrition education, gave birth to the national nutrition policy, the ultimate goal of nutrition education is to promote optimum health. In 1969, the White House Conference on Food, Nutrition and Health set forth certain objectives designed to provide each American with the information necessary to make wise decisions in good selection (67,75,76,77,78,86,87). The Conference noted that nutrition has economic, social and political connotations which extend beyond the knowledge and understanding of the public. This assertion is consistent with statements by other experts on nutrition that educators in the 1970's have the duty and responsibility to inform the nation's citizens about nutrition.
