A storage study on fruitcake was conducted at NLABS to determine if the fortified fruitcake would retain its acceptability and nutritional value in extended storage. The thermoprocessed flexibly packaged fortified fruitcake was to be nutritionally adequate for use as a NASA contingency ration. Vitamins (A, C, thiamin, niacin, riboflavin, pyridoxine, B12), calcium and magnesium were added t o meet 100 percent of the 1968 Recommended Daily Allowance (RDA) for males 22-35 years of age. All fruitcakes were stored for three years at 4 and 21 C and one year at 38C. Fortified fruitcake was found to be acceptable. It retained nutritional quality during storage and met NASA's requirements for major nutrients.
