摘要

L.lactis was the first bacterium that was isolated in pure culture in 1873 by Joseph Lister.For the last 100 years,especially because of its economic importance,this bacterium has been intensely studied and characterized.A wealth of knowledge is available about its microbiology,physiology,ecology and technological use.
