When I first set up River Cottage, people were becoming more aware of the environment but it wasn't mainstream like it is now. My motives were good food and a better quality of life, with the happy result that growing my own this way was in tune withthe planet. Being organic was an obvious choice, not just because chemicals come at an environmental cost, but because no one wants their dinner drenched in them.
