Organic potato production is a growing segment in the industry, and researchers are looking at ways to increase productivity and profitability for growers. In Idaho, there are about 150 certified acres, but demand for organic Idaho potatoes could account for 2 percent of the states production, between 6,000 acres and 7,000 acres. Bryan Hopkins, associate professor at Brigham Young University, recently completed a study commissioned by the National Potato Council that compared methods of production between organic and conventional potatoes.
