Awareness of the need for allergen control and a determination to protect consumers have been growing in the South African food industry. Dr Harris Steinman, Karen Horsburgh and Carine Davies of Food & Allergy Consulting & Testing Services (FACTS) discuss some pertinent issues. IN South Africa, there is very little locally-focused literature to guide allergen control. Although, in general, certain key areas must be considered when planning an allergen control policy, each manufacturing process is unique and must be explored in detail in each locality.
