THE comprehensive functionality of dietary fibre as a food ingredient was clearly illustrated in a recent test conducted by German company, CFF, manufacturers of Qualicel insoluble dietary fibre, which is distributed in South Africa by Sharon Bolel Chemical Marketing. CFF set out to prove the extent to which a dietary fibre food ingredient can improve a product. Fibre was included in six components of a chocolate bar and, as well as enhancing the product overall by reducing calories and improving its shelf life, was also found to improve specific aspects of the confectionery.
