Processing is an important marketing function in the present marketing of agricultural produce. A little more than a century ago, it was relatively unimportant function. Large proportion of farm produce sold in an unprocessed form and great deal of the processing was dome by consumer themselves. Processing convert the raw material into the form in which it can easily be consumed by the consumers. Essentially processing concerned with addition of value to the product by changing its form mainly for horticultural products coming from the field.
