Freezing to the fore at SPE. (Seafood Processing Europe.)

The author reports from the eighth Seafood Processing Europe (SPE) 2005 in Brussels. It is reported that freezing equipment has been put in the international spotlight due to an increasing focus on quality. Information is provided on freezing equipment developments that were exhibited, including the following: Bubble Slurry Ice machines; impingement tunnels; onboard plate freezers; defrosters; forced convection equipment; skinning equipment; dark meat removers; and whitefish pinboners.
