摘要

Trace elements (TE) like Fe, Zn, Cr, Co, Ni, Cu, Mg, Mo and Se are needed in the diet to maintain proper human health, because they can not be synthesised by the body. Food normally supplies the major proportion of totally daily TE intake by humans. Cereals and their products are a type of food that has always been the basis of people nutrition, and it is apparent their major impact on human health. Analyses of TE contents in some types of grain, flour and bread from Nis market of Serbia, determined by ICP-OES, showed descending order of TE contents as follows: Al > Fe > Zn > Mn > Cu > B > Cr, in all tested samples. Analysis of variance (ANOVA) showed that there was no significant differences in content of determinated TE in samples of flours and breads (p>0.05), while there were significant differences in content of these TE between samples grains compared to the content of TE in samples of flours and breads (p<0.05).
