摘要

Twelve wheat cultivars (V-7005, Sarsabz, V-8004, T.D.I., Moomal, Kiran, Abadgar, Anmol, Mehran-89, T.J.-83, Diamond and Hamal Faquir) were evaluated in Pakistan in 2004 for major chemical traits (moisture, protein, wet gluten, gluten index, dry gluten, water binding in wet gluten, hardness and falling number). Moisture content of the cultivar was in the range 8.8-10.2%. The protein content of V-7005, Kiran, Abadgar, Anmol, Mehran-89 and T.J.-83 was 14-16% higher than other cultivars. Hardness scores were in the range 50-60. Gluten index was in the range 38.8-75.3%. Falling number of all cultivars was higher than 400 seconds. Results showed that no alpha -amylase was present, and all cultivars were suitable for bread production (leavened or unleavened)..
