This paper describes the advances in DNA sequencing and their applications in cereals, particularly in improving wheat grain quality (protein content, starch quality, processing and end-use characterics, nutritive value, climate-based adaptation, and purity). The application of DNA analysis tools in rapid wheat quality assessment and the role of genomics-derived tools in developing transgenic wheat varieties with improved quality traits are highlighted. By using these techniques, genes can be expressed at specific stages of grain development and in specific grain tissues to achieve precisely targeted changes in wheat quality.
