The breeds of dairy cattle (Bestuzhevskaya, Simmental'skaya, Black and White) zoned in the Cis-Volga Region and their hybrids F_1 are compared with respect to a set of economical and biological features: the yield, physicochemical composition and technological properties of the milk, biological value of the protein, and the fat and acid composition of the milk fat. Considerable intergenotype distinctions were revealed in the physicochemical composition of the milk.
