Most of us are confident that pasturised milk is hygienic. However, without the use of stainless steel in the milk production process, it is doubtful that this would be the case. The use of nickel-containing, austenitic stainless steel in the dairy industry can be traced back to 1913, though it didn't became widespread until the 1940s. By facilitating the efficient, safe handing and processing of milk, stainless steel has helped reduce the baseline cost of the product to 55 in the year 2000 from about 100 in the 1920s.
