Aflatoxin-producing strains of Aspergillus flavus isolated from cheese.

52 commercial cheeses, produced in southern Spain, were examined for contamination with aflatoxin-producing strains of A. flavus. The cheeses were made with different types of milk (8 of cow milk, 12 of ewe milk, 13 of goat milk and 19 of milk mixtures from various species: cow, ewe and goat). The frequency of detection of various species of Aspergillus (A. glaucus, A. niger, A. nidulans, A. sulphureus, A. terreus and A. flavus) was examined. Aspergillus spp. were detected in >38 of goat milk and21 of mixed milk, 12.5 of cow milk and 8.3 of ewe milk cheeses. Aflatoxin-producing strains of A. flavus were detected, using chick embryo toxicity, in 4 (2 of goat milk and 2 of mixed milk cheeses) of 52 cheese samples.
