Wound healing consists of a perfect and coordinated cascade of events that result in tissue reconstitution where local supplies with nutrients as well as general nutritional status have important roles [1]. Amino acid profiling of biological samples are good indicators of catabolic and nutritional status of an organism as well as a useful tool for understanding metabolic implications under various physiological conditions. [2-5]. It is known hydroxylation of phen-ylalanine (Phe) to tyrosine (Tyr) is considered to be the most important determinant of Phe catabolism occurring predominantly in the liver [6]. On the other hand plasma molar Phe to Tyr ratio is considered good indicator of net protein catabolism in the periph-eral tissue, particularly following injuries [7-9]. Branched-chain amino acids (BCA), comprising valine (Val), leucine (Leu) and isoleucine (Ile), are catabolized in peripheral tissues [10,11]. These amino acids are not only structural constituents of proteins but they are considered as regulators of insulin signaling [12]. Also, it has been shown that circulating BCA vs. aromatic amino acids (AAA) is a good indicator of liver energy status [13], while nutri-tional status of an organism is reflected on molar ratios between glycine (Gly) to BCA and alanine (Ala) to BCA in plasma [5].
