NOWADAYS, the demand for higher performing biomateri-als has outpaced the ability of scientists to provide the next generation of such products. The slow implementation of hyaluronic acid [HA, hyaluronan), the current most applicable biopolymer used in food, cosmetic and pharmaceutical industries is an example of this. However, it is a massive time and money consuming process to develop a new generation of biopolymers.
