This excellent textbook has been substantially revamped from the second edition with the inclusion of a number of different authors and many chapters completely revised. This book is aimed towards students studying nutrition, health and food science; health professionals, teachers and food scientists; as well as an informed public. As such, itassumes that the reader has some background in biochemistry and physiology.The book is organized into eight sections with 40 chapters. It is presented in a logical order starting with: (i) energy and macronutrients; (ii) organic and inorganic essential nutrients (water, electrolytes and micronu orients); (iii) nutrition-related disorders (overweight and obesity, malnutrition, cardiovascular disease, cancer, diabetes and the metabolic syndrome and eating disorders); (iv) an overview of foods, including toxicity and safety; (v) nutritional assessment, including food analysis; (vi) nutrient needs and issues over different life stages, including a chapter on sports nutrition; (vii) clinical and public health covering food habits, nutrient reference values and dietary counseling; and (viii) some case studies with a mixed collection of chapters on poverty and food insecurity, nutrition, HIV and AIDS and nutritional support for the hospital patients.
