Probiotics, such as Lactobacillus and Bifidobacterium species, have been scientifically exploited for their health-promoting activity in animal experiments and human clinical trials. The current market for probiotic food products is dominated by probiotic yoghurt and beverages, which are mostly made from dairy ingredients.
