Development of Value Added Products from Jackfruit Bulb

Jackfruit is mainly found in tropical Asian countries like India. Sri Lanka, Bangladesh, Indonesia, Malaysia and the Philippines. It is quite popular in Eastern and Southern India and is cultivated widely in Kerala, Karnataka, Andhra Pradesh, Tamil Nadu, West Bengal, Maharashtra, Assam, Andaman and Nicobar Islands. In India, the total area under jackfruit is approx imately 102,000 ha (Bose et al, 2003). Jackfruit constitutes three parts namely bulb, seed and rind. Jacob and Narashimhan (1992) reported that jackfruit constitutes 30 per cent of edible portion (pulp), 12 per cent seed and 50 per cent rind on weight basis.
