India is one of the leading country in pepper production and second only to Indonesia in the World. India produces a small amount of white pepper (150 tonnes) for domestic and novelty pungency. White pepper has a great demand in the western market dueto attractive colour and less pungency. The prototype white making machine developed at the Post Harvest Technology Scheme of the UAS, Bangalore, was evaluated for its performance to convert raw pepper berries into white pepper. The machine performed ata maximum peeling efficiency of 99.1 and 98.1 percent, respectively, at 250 and 350 rpm for the pre-treated berries soaked in cold water for 4 days. The corresponding throughputs were 198.6 and 298.3 kg/ h. The best quality of white pepper kernels was obtained from pepper berries pre-treated in cold water for 3 days. The cost economics of machine processing was Rs. 0.13 per kilogram of white pepper berries.
