The effect of a dried Spirulina platensis cyanobacterial biomass enriched with trace elements on the rate of acid development by pure cultures of Streptococcus salivarius subsp. thermophilus CH-1, Lactobacillus delbrueckii subsp. bulgaricus CH-2, Lactobacillus acidophilus La-5 and Bifidobacterium bifidum Bb-12 was evaluated in bulk milk (free of inhibitory substances). All starter culture strains were stimulated (P<0.05) to varying degrees. The components of the cyanobacterial biomass thought to beresponsible for the stimulation were tested in laboratory simulations. In particular, the effect of trace elements (iodine, zinc and selenium), vitamins (B complex, C, A and E) and nitrogenous compounds (peptone, adenine and hypoxanthine) was investigated. The stimulation of the strains by the cyanobacterial biomass was mostly due to peptone, adenine and hypoxanthine. Only peptone had a stimulatory effect (P<0.05) on B. bifidum. It was concluded that the S. platensis biomass that was rich in trace elements, vitamins, sulphur-containing amino acids and unsaturated fatty acids, also had a highly beneficial effect on the nutritional value of milk. It is concluded that this might provide a new opportunity for the manufacture of functional milk products.
