Raw goat milk samples from the indigenous Greek breed in the area of loannina, Northwestern Greece, were collected during one lactation and analyzed for their amino acids content. Also the major constituents of goat milk, i.e. fat, protein, lactose and solids not fat, were determined. The average composition (%) of milk was: fat 4.10, protein 3.36, lactose 4.48 and solids not fat 8.54. The major amino acids were proline, glutamic acid, alanine and leucine with mean contents 831.9, 720.7, 273.7 and 237.6 mg/ 100ml milk, representing 23.1, 20.0, 7.6 and 6.6% of the total amino acid content, respectively. Seasonal variations were observed for almost all of the amino acids studied except sehne, alanine and leucine. The observed variations of the amino acids contents might be possibly attributed to the differences in total protein content of goat milk during lactation.
