Inhibition of psychrotrophic bacteria growth in raw milk stored at low temperature by Leuconostoc mesenteroides subsp. dextranicum LL152

L. mesenteroides subsp. dextranicum LL152 was tested for its capacity for preservation of raw milk at low temperature (7deg C). The total inhibition of psychrotrophic bacteria in raw milk was achieved with 107 c.f.u./ml of LL152, even with psychrotrophic bacterial counts of 7.7 X 106 c.f.u./ml. Higher levels of LL152 (108 and 109 c.f.u./ml) showed the same inhibition capacity as 107 c.f.u./ml. Inhibition was higher after 2 days of storage when LL152 was added 1 h after milking than when it was added 24 h later. This strain resulted in only a small pH decrease of 0.2 units 2 days after adding 107 c.f.u./ml.
