Current state and modern tendencies in meat consumption and technology [Polish]

摘要

In consumers' opinion (as represented by the media), the quality of Polish meat products has deteriorated within the last few years. In this survey only results of sensory evaluation were taken into consideration while other quality components were omitted, especially those related to the safety of food. The importance of the latter aspect is emphasized in the recently published report of the World Health Organization which discusses the influence of diet and nutrition on prevention of chronic diseases. In the technology of meat processing several tendencies have been observed which aim at protecting consumers against negative effects of consuming food of animal origin. These preventive measures consist in reducing animal fat content in processed meats, the content of salt, usage of nitrates and changes in the processes of meat smoking.
