摘要

Poultry meat and eggs continue to be one of the most important sources of foodborne Salmonella infections in humans. On the basis of the data available in Germany on the occurrence of salmonellas in both breeder flocks and flocks for poultry meat and table egg production strategies for their control are discussed. General hygienic requirements for the production of poultry as well as prophylactic measures to increase resistance of the birds against Salmonella infection are considered. Questions as to the practical implementation according to existing legislation are discussed.
