Enrichment of sausages and other meat products with dietary fibre is discussed with reference to: increasing demand for functional foods; enrichment with cereal or apple derived fibre preparations; impact on diabetes and constipation; the legal status of fibre enrichment of meat products; and sensory quality of meat products with added fibre.
