During usual longitudinal splitting of beef carcasses in the slaughtering process, also the spinal cord is sawed. So, CNS-tissue which can include infectious BSE-agens, is spread in the surroundings and on the cut areas. A potential hazard, first of all for the sawer, can not be excluded. Therefore, alternative methods to median longitudinal splitting were evaluated. The hole (not split) vertebral column was remove from the carcass, the carcass was split paramedian or cutting was done without longitudinal splitting. With all 3 methods, the vertebral channel with the spinal cord was not opened. The CNS-analysis revealed, that, with the cutting techniques evaluated, there is no risk for the cutters to come into contact with risk material, particularly with spinal cord tissue. The microbiological and substantial meat quality is not influenced in a negative direction by the evaluated cutting techniques.
