To realize the european regulations national vertical product spezifical instructions include meantime also hygiene control measures, that is the microbiological control of rooms, fittings and instruments of work. 11c of "FlHV" and 14 of "GFlHV" demand from factories, which are working with meat, periodical microbiological control of surfaces after cleaning and disinfection. These investigations should he not so expensive, easy to made and should give representative results about contamination of surfaces. Food processing plants can investigate samples in own laboratory or samples are sent away to another acknowledged company. But the method of collecting and storing the samples and duration of sample transport to laboratory may influence the results considerable. That's why we made model investigations to find out the influence of time and temperature during the transport on germ counts in the swab samples. Our results showed expected a great dependence on germ counts from swab transport conditions.
