摘要

A marine exo- alpha-glucosidase (EC 3.2.1.20), characterized by good transglycosylation activity towards different acceptors using maltose as donor, was identified and purified from the anaspidean mollusc Aplysia fasciata. The enzyme was used for high-yielding enzymic alpha-glycosylation of pyridoxine. The reaction was optimized, reaching 80% molar yield of products (pyridoxine monoglucosides at 24 g/l; pyridoxine isomaltoside at 35 g/l). High selectivity towards the 5' position was observed for both monoglucoside and disaccharide formation. This is suggested to be the 1st description of the enzymic production of pyridoxine isomaltoside.
