We have run a 700 colony operation in Notre Dame de Lourdes in southwestern Manitoba since 1999. We realized, after a short time, that the drying down of honey prior to extracting was a primary problem when it came to performance in our field of business. Time is a scarce commodity for beekeepers, especially during the honey flow, and producing high-quality, dry honey can be quite difficult when relying on traditional drying methods.
