Migration of sugars in Tunisian cv. Kenta de Gabes dates.

Fruits of the date cultivar Kenta de Gabes contain high concentrations of reducing sugars (glucose and fructose). A whitish film of sugar crystals generally forms on the surface of these fruits during storage, thus making packaging difficult. This deposit is mainly due to solubilization of glucose and fructose molecules in moisture contained in the fruits, thereby facilitating their migration to the surface. Stored fruits should be wrapped in a protective film to reduce moisture permeability through the peel. Moisture diffusion in these fruits (1.14 X 10-11 m2/s) was comparable to that of grapes.
