He peels the brown pear. The pulp has evolved into a kind of sweet-smelling jam, which oozes into a bowl. "That's why the pear is known as the 'fragrant juicy pear'," says Liu Minhai, a 58-year-old farmer of Shichuan Town, 20 kilometres northeast of Lanzhou, the capital of Cansu Province in northwestern China.
