摘要

In this study, Alicydobacillus acidoterrestris in the epiphytic microflora of apples and apple juice concentrates were investigated. A. acidoterrestris spores were isolated from two batches of apples supplied to the plant for processing. Through the years 2001 and 2002, 38 batches of apple juice concentrates produced in Turkey were found to be free of A. acidoterrestris spores. The effects of conventional and ultrafiltration technologies on A. acidoterrestris spores were also investigated. The ultrafiltration process was found to be much more effective for the rejection of spores when compared to conventional clarification processes. However, a varying number of A. acidoterrestris spores were still detected in the finished product after ultrafiltration depending on both contamination level of feed juice and cut-off value of membrane.
