New Brunswick apple grower Blair Stirling started about 20 Honeycrisp in his Gagetown orchard last year. Honeycrisp produces large juicy fruit that can be displayed and sold individually, a comer of the market that has been the preserve of imported varieties. Stirling, one of the largest growers in the province, hopes this apple will give producers an entree into that higher priced market. "Hopefully, this a new variety that we can add to our orchards that will add to the value of what we are tryingto do as growers," he says. Although it should be a higher valued apple, Stirling expects Honeycrisp to be sold in smaller quantities than McIntoshs and Cortlands, the stalwarts of the bagged apple trade. He sees it as an addition, not a replacement tohis current selections.
