THE Italian aquaculture industry produces over 230,000 tonnes of trout, bass, gilthead, eel and molluscs each year, with Tuscany producing over 5,000 tonnes of this total. The first experiments with freshwater fish farming began in Tuscany in the 1950s thanks to the farmers of the Garfagnana mountain area. Seawater fish farming began around the 1970s thanks to collaboration between the fishermen's co-operative of Orbetello and entrepreneurs, which saw the first hatchery built for producing bass. Around the mid 1970s, the first fish farms were built.
