Germany's red cabbage production declined during the later 1990s but stabilised at the beginning of the current decade. In 2004 production totalled 132,000 tonnes compared with 180,000 t in 1996. The 2004 crop was plentiful, which led to very low prices, around 5 euros per 100 kg. Most red cabbage was grown on contract for processing, and only a minority for fresh sales. Consumers are increasingly buying it in processed forms. The growing area in 2004 was around 2,700 ha, compared with 3,000 to 3,500 ha in the early 1990s. The emphasis was on later-maturing varieties. The main production regions were North Rhine-Westphalia, Bavaria, and Schleswig-Holstein. The greatest concentration of growers was around Dithmarschen in Schleswig-Holstein, where local climatic conditions are ideal, though even there less is being produced. Germany has been importing some 2,000 - 4,200 t of fresh produce annually from the Netherlands during the past 7 years. It also exports to Sweden, the Netherlands and Italy. Domestic demand is highest in Germany's eastern provinces. Netherlands exports go mainly to the UK, Germany, and France, but also to eastern Europe.
