Studies on the determination of vitamin D in dairy products by HPLC are reviewed. The following aspects are covered: sample preparation by saponification and extraction or by direct fat extraction, with consideration of sample concentration and purification, and vitamin stability; conditions for normal-phase and reverse-phase HPLC; detection systems (UV, electrochemical and MS); and AOAC official methods.
